Breadfarm to install new Bongard hearth stone oven and remodel bakery and storefront after 6 ½ years of bread baking operations.
Edison, WA — November 2, 2009 — Breadfarm, an artisan bread bakery is installing a new oven and remodeling their bakery and storefront after 6½ years of operation. The bakery will be closed November 1-5 2009 as oven installation and general remodel operations take place. Breadfarm is located in the rural village of Edison, WA, located at the base of Chuckanut Drive in NW Skagit Valley. The Bongard 4 deck steam injected oven will increase production capacity with 1/3 more oven space for bread baking. The remodel will increase efficiency in production workspace, office and storefront.
“When we bought our original oven it was over 20 years old, we’ve baked on it nightly for the past 2375 days, and it’s tired. We have a brief downtime here between summer and the holidays in which this could happen. Sarah Phillips, who has been baking with us since our second week of business will break in the new oven Thursday night, needless to say, she’s excited, actually, we all are!” says Renée Bourgault, owner.
Established in 2003, Breadfarm is a small scale artisan bakery that services grocers, restaurants and cafes throughout Skagit, Whatcom and San Juan counties with fresh bread delivered 7 days a week. Focused on scratch baking of naturally leavened, hearth baked breads, cookies and rustic pastry, they support 22 area farmers and producers by purchasing local, organic ingredients whenever possible. The storefront in Edison contains a vibrant collection of product offerings. Breadfarm participates in 4 area farmers market; Bellingham, Mt Vernon, Everett and Oak Harbor and employs a staff of 16. Their business is comprised of wholesale, retail, farmers market and e-commerce sales. They will resume baking on November 5. Their retail shop, delivery to grocers, restaurant and wholesale accounts will resume on Friday November 6.
